A nourishing dish that mix the sweetness of spring cabbage with the juiciness of the chicken, it can be served as a snack with a glass of wine or as a main dish.

■ 19:00’s recipe──Braised chicken breast with spring cabbage and new potatoes
Ingredients(for 2 to 3 persons)
200〜300g Chicken breast
1/4 Spring cabbage
2 New potato (average size)
1/2 Onion
* Cut all ingredients above in a one bite size

1 Bay leaf
1 Teaspoon of vegetable consomme
1 Soup spoon of unsalted butter
1 Soup spoon of olive oil
Suitable amount of water (enough to cover all ingredients)
50cc White wine
Salt and pepper
Instruction
1. Season chicken with salt and pepper and leave it in the refrigerator for at least 30 minutes.

2. Put olive oil in a heated pan, grill the chicken on medium heat, take out when both sides are colored.

3. Put the vegetables in the pan from which the chicken was taken out and fry them over medium heat. When the cabbage becomes soft, add the white wine.

4. Add the water, consomme and bay leaf, cover the pan and simmer for 30 minutes on low heat.
* Replacing a portion of the water with 50cc of white wine will enhance the flavor.

5. When the new potatoes become soft, add salt and pepper, finally add the butter and turn off the heat.

6. Serve on a plate with mustard grains.

"To braise", is a French cooking method in which ingredients such as meat, fish, and vegetables are cooked into a small amount of water or wine and steamed in a pot or in the oven. The ingredients simmered carefully in an oven or low heat, get tender.

It is also delicious to prepare sausages with this method and to replace water with soy milk.
